Stuffed delicata squash

Stuffed Delicata Squash is another fall and winter favorite!  This dish is delicious, healthy and easy!

Total Time: 40 minutes

Ingredients: 

  • 1 large delicata squash or 2 medium (you can substitute with spaghetti squash)

  • 1 lb. ground pork

  • 2 garlic cloves cropped

  • 1 onion

  • 1 bag of stir fry vegetables

  • 2 tbsp. of olive oil + 2 tbsp. olive oil

  • Sea salt to taste

Instructions:

  • Preheat the oven to 400 degrees

  • Cut squash long ways, scoop out the seeds, place on baking dish face up with 2 tbsp. of olive oil in each.

  • While the squash cooks, sauté onions in olive oil, caramelizing then, until soft and browned.  Add garlic

  • Then add sausage cook about 8 minutes until cooked through.

  • Toss in the bag of stir fry vegetables cover, stirring occasionally until softened about 5 minutes, add salt. Drizzle a little more olive oil on when finished cooking.

  • Stuff the squash with sausage and veggie mixture and serve.  Enjoy!
